Summer salad with mango and spelled


30 minutes prepare
4 people









Ingrédients: 


300 g spelled
200 g of mango cubes
1-2 big sweet potatoes
bunch of parsley
2 spring onions
200 g sugarsnaps
30 g of almond shavings
coconut shavings
2 el Euroma Mediterranean oven vegetables herbs
3 tbsp olive oil
1 tbsp peach-apricot vinegar
pepper
salt .


Preparation method :


1. Boil the spelled according to the instructions on the package, drain and allow to cool.
2. Peel the sweet potato and cut into cubes. Finely chop the parsley and cut the spring onion into rings. Cut the sugarsnaps also slightly finer.
3. Cook the sugarsnaps and the sweet potato until they are done, drain and let cool.
4. Take a large bowl and pass the spelled, sugarsnaps, sweet potato, mango, spring onions and parsley.
5. Then make the dressing by mixing the Mediterranean oven vegetables herbs, olive oil, peach-apricot vinegar and pepper and salt to taste. Stir this through your salad.
6. Toast the amanel shavings and coconut shavings briefly in a pan.
7. Serve with the toasted almond and the coconut shavings.
