Recipe: chicken with Tomatoes

I’ve been going via my folder of recipes lately and have come
across some antique favourites – like those devilled drumsticks. i have my
mum to thank for lots of these recipes – she photocopied them for me
when I first moved to Paris in 1995 – now not that I had a kitchen massive
enough to prepare dinner in returned then! they've accompanied me all the manner to
Toronto in which I pull them out occasionally and make an “oldie however a
goodie”. This recipe isn't always one I had made earlier than and it’s written out
in my mum’s handwriting – searching suspiciously like she copied it out
of a magazine, so I don't have any way of giving any credit wherein it’s due. I
cherished the idea of a brief consolation stew-kind dish with hen, tomatoes
and honey and i specially preferred the addition of ginger and cinnamon –
it lends a touch Moroccan flavour to the dish which I complemented through
including some lemon zest and serving it atop fluffy couscous. It’s a
remarkable bowl of flavour on a chilly wintry weather’s night.

Prep time: 15 minutes

cook time: 20 mins

overall time: 35 minutes

Serves: 6

?6 tablespoons butter
?1 medium onion, finely diced
?4 cloves garlic, minced
?2 tablespoons cinnamon
?1 tablespoon powdered ginger
?2 x 800ml cans diced tomatoes, 1 can drained
?1.5 kg chicken thighs, trimmed and chopped into bite-sized portions
?1/4 cup liquid honey
?1 tablespoon lemon zest
?clean chopped parsley, to serve
1. melt butter over medium-excessive heat till bubbling.
2. upload the onion and sauté till translucent, about four mins.
3. add the garlic and prepare dinner until gentle, approximately 2 minutes.
4. add the cinnamon, ginger and tomatoes stir to combine. cook for about 5 mins till aromatic.
five. add the chicken pieces, stir well then cowl and cook dinner over medium warmth till the hen is cooked thru, about 15 mins.
6. eliminate chook from the sauce, hold heat (in the oven, covered with tin foil).
turn up the warmth on the sauce to reduce it till scorching – the
tomatoes will begin to caramelize a touch – stirring constantly so the
sauce does no longer stick and burn.
eight. Stir inside the honey and lemon zest go back the chicken to the sauce and heat thru.
nine. Serve over warm couscous and top with the parsley.
It’s so very brief and easy and bet
what? It tastes even higher the following day. This one is a keeper – I’ll
truely be adding it to our “make it on Sunday to enjoy through the
week” roster.
